Physical Properties of Amino Acids

All Proteinogenic Amino Acids that make up Proteins exist in a solid state under standard conditions (T=298K, P=1 atm). Upon melting, they behave as amorphous substances, meaning they do not have sharply defined melting points.

The Solubility of Amino acids in Water varies significantly. Cysteine and Tyrosine are the least soluble, while Proline and hydroxyproline are the most soluble. All Amino acids are readily soluble in dilute solutions of acids and alkalis, and are practically insoluble in absolute alcohol and ether.

Reactions of Amino Acids

Overall, the number of reactions that Amino acids can undergo as Organic compounds is quite extensive. Therefore, we will only examine those that are somehow related to the biochemical orientation of certain reactions or are utilized in Laboratory studies of amino acids—specifically, the characteristic reactions involving their functional groups: the α-carboxyl group, the α-amino group, and the side-chain R-group.
