Amino Acids contain multiple charged groups, which makes them readily solvated and highly soluble in polar Solvents (such as Water and ethanol), while remaining insoluble in non-polar solvents (such as benzene, hexane, and ether). The melting point of amino acids is quite high (> 200° C), which is also due to the presence of these charged groups. Breaking the ionic bonds that stabilize the crystal lattice requires a relatively large amount of energy.
