9.3. CHEMICAL COMPOSITION OF YEAST
The chemical composition of Yeast depends on the species and cultivation conditions. Yeast contains on average 75% Water and 25% dry matter, with the following approximate composition, %: inorganic substances — 5–10; CARBOHYDRATES — 25–50; nitrogen — 4.8–12.0; Proteins (N × 6.25) — 30–75; Lipids — 2–5. The Main Components of the inorganic fraction are phosphoric acid (about 50%) and potassium (about 25%).
Yeast contains Essential Amino Acids, making the composition of yeast protein close to that of complete proteins, as well as a range of B-group Vitamins. Yeast is capable of synthesizing carotenoids (represented by the genera Rhodotorula, Sporobolomyces, Rhodosporidium, and Sporidiobolus). The carotenoid content ranges from 80 to 570 mcg/g.
