Preface
The purpose of this study guide is to help students gain a deeper and more conscious understanding of the course curriculum for "Fundamentals of Microbiology" through practical laboratory sessions at the department. The guide is recommended for undergraduate students enrolled in full-time and part-time programs in Commodity Science (Major 100800.62) and Food Production Technology and Catering Organization (Major 260800.62).
This study guide has been prepared in accordance with the Federal State Educational Standard and the current curriculum for the 100800.62 Commodity Science degree program.
The guide comprises nine thematic laboratory sessions of an applied nature, designed to help students acquire the skills necessary to build relevant professional competencies. The classes are conducted interactively, making extensive use of small-group teamwork (based on the findings of student research groups). Students acquire practical microbiological analysis skills for solving professional problems.
The guide introduces students to the setup of a microbiological laboratory in the food industry, its equipment and instruments, and modern Cell/15.html">Microscopy Techniques, helping them master the methodology of microbiological research. Special attention is paid to safety regulations in the microbiological laboratory (Appendix 1), rules for handling microorganism cultures, Methods FOR PREPARING and sterilizing nutrient media, and obtaining enrichment and pure cultures of microorganisms. Detailed information is provided on the morphological and cultural properties of microorganisms encountered in food Processing, as well as their cultivation methods (Topics 1-6).
Students are given the opportunity to independently conduct microbiological analyses of food commodities (Topic 7) and non-food goods (Topic 9), and to assess the presence of pathogenic Microorganisms in the environment (Topic 8). Review Questions are provided at the end to help students reinforce the covered material.
In addition to the main body, the guide includes a Preface, List of Abbreviations, Introduction, Conclusion, Appendices containing essential reference data, bibliography, and a Glossary of terms and Structure/97.html">Definitions. The appendices provide information on preparing specific nutrient media, stains, and disinfecting solutions, as well as standardized microbiological criteria for individual food groups.
The achievements of modern microbiology rely on the advancement of physics, chemistry, biology, and biochemistry. Therefore, a thorough understanding of these sciences—especially organic chemistry and biochemistry—is essential for the successful study of microbiology.
Carrying out the practical work outlined in this guide will help foster students' interest in addressing microbiological safety issues.
