CHAPTER 7. THE NUTRITIONAL PROCESS AND ITS PATHOLOGY

ANATOMY AND PHYSIOLOGY OF THE DIGESTIVE ORGANS

METABOLISM AND ENERGY TRANSFORMATION. THERMOREGULATION

Human life is fundamentally based on METABOLISM and Energy Exchange. In Organs, Tissues, and Cells, two interrelated processes occur continuously: assimilation, the synthesis of complex substances, and dissimilation, their breakdown.

Cellular assimilation and growth are only possible when nutrients enter the Organism, serving as building blocks for the synthesis of living tissue. Nutrients include Proteins, fats, CARBOHYDRATES, mineral salts, Vitamins, and Water. In addition to serving as structural material, nutrients act as a source of energy for the body.
