Glutathione was isolated from Yeast by Hopkins [395] in 1921. Harington and Mead [396] established The Structure of this peptide through synthesis, proving it to be y-L-glutamyl-L-cysteinylglycine. Glutathione can exist in reduced and disulfide forms and is widely distributed in nature. It serves as a growth factor for certain microorganisms [397] and acts as a glyoxalase cofactor. Its role in metabolic processes is due, at least in part, to the presence of the sulfhydryl group in its molecule (pp. 268 and 315).
