Usually, Enzymatic Hydrolysis proceeds quantitatively at an enzyme-to-substrate ratio of 1 : 50 to 1 : 100. If it is necessary to limit the degree of hydrolysis, the ratio is increased (up to 1 : 1000). At the same time, in some cases, to achieve complete hydrolysis, the ratio has to be decreased (down to 1 : 10).
